Greek yogurt with fresh grapefruit and almonds . . .
This is my perfect spring breakfast — light, refreshing, and filling grapefruit yogurt. Also, I just want to be able to wear my pre-pregnancy pants again, okay? I’m five months postpartum, and I miss my clothes. (How did I manage to gain like 50 pounds this pregnancy?) So I have to pay attention to what I eat for a bit.
I eat this many mornings a week lately. I’ve actually started to crave it? I had forgotten the power of non-fat Greek yogurt to keep you full — and also how delicious fresh grapefruits can be. Because I mix in any leftover grapefruit juice, this basically makes a grapefruit-flavored kefir-consistency bowl of yogurt, with pieces of juicy grapefruit and crunchy almonds to keep the texture interesting. I use raw almonds because I find that toasted almonds overwhelm the delicate flavor of the grapefruit. And, truly, I don’t think the grapefruit yogurt needs any sugar.
I’m also a huge fan of how quick this is to make. Which, let’s face it, with three little ones constantly running amok, is highly important. Plus, when they see me reaching for a grapefruit, the older two often ask for their own grapefruit halves! Scooping out grapefruit is actually not a terrible activity to keep them occupied for a bit.

This is a low-calorie, light breakfast that is refreshing and my perfect way to start a spring morning. If you like fresh grapefruits, tart yogurt, and almonds, you’ll like this. I’ve been eating it several times a week lately while I try to shed baby weight!

- Yield: 1 bowl of yogurt

Instructions
1. Prepare grapefruit segments.
Place grapefruit on its side and cut it in half. Cut along the inside of the segment membranes to loosen the little grapefruit triangles.
2. Add the segments to the yogurt.
Scoop out 3/4 cup of nonfat greek yogurt into a bowl. Scoop out all of the grapefruit segments on top of the yogurt.
3. Add grapefruit juice to the yogurt.
Squeeze the grapefruit halves over the bowl to release any remaining grapefruit juice into the bowl.
4. Add almonds.
Top with 1 1/2 tablespoon of sliced raw almonds.
5. Enjoy!
Mix it all up and enjoy your spring treat.
